German Pancakes

Again, this one is not difficult but I've been reading all about Europe and it makes me think of my great-grandmother who is from Holland who gave us this recipe.


You will need:
 6 eggs
1 cup flour
1 cup milk
Syrup


Pre-heat your oven at 400 degrees and spray 8 1/2 x 11 pan. You have to beat the heck out of the 6 eggs. I mean, if you think "yea that's good", do it for another two minutes. Once the eggs are really really really beaten, then mix in the milk and flour. Make sure there are no lumps. Pour the mixture into the glass pan and let cook for 20 min. cut into squares and serve with syrup.

Normally the pancakes will rise around the edges and the center will be a very spongy looking. Let it cook until it's just golden brown. (at high altitudes the pancakes will not rise as much, also using fresh eggs will make it raise more.

Sweet Hawaiian Spinach Dip

I will be very upfront with these recipes, not all were created by me. Although the following recipe was given and taught to me by my mom....I highly doubt she was the creative genius behind it.

Sweet Hawaiian Spinach Dip

You will need:
1 cup of Mayo
1 16 oz carton of sour cream
1 package of knorr vegetable soup mix (not prepared)
1 can of sliced water chestnuts
1 10 oz package of frozen spinach
Sweet Hawaiian bread

You will want to pull the spinach out of the freezer first and let that completely defrost and then drain any remaining liquid for the spinach.

You will then add all of the ingredients together, minus the Hawaiian bread and mix well. I usually suggest serving this after it has been in the fridge for a couple of hours.

You then just need to serve it cold on piece of Hawaiian sweet bread and you have yourself a favorite dip of the part.

My name is Mandi and I love to cook. At work and school I am always being asked for my recipes since I honestly cook dinner at least 5 days a week, which apparently is very unusual for a couple who both work full time. I'm starting this blog in hopes that some of these recipes will make someone want to cook and learn how to enjoy it. If anyone has any requests for a food let me know. I cook all different foods and all of my recipes are usually easy and somewhat quick to do. Although I tend to cook pretty quick since I've been doing it for a while i can tell you that the prep work is usually very quick for anyone.



 Lets start with a summer favorite or almost everyone- Guacamole

Serves 4-6 depending on how much guacamole someone likes to eat
  You will need:
            4 medium size avocados
            1 shallot
            2 Roma tomatoes
            a bunch of cilantro
            2 limes
            garlic powder, salt, pepper


This one is super easy because all you do is mash up the avocados, cut up the tomatoes, cut up the shallot, put in some cilantro, lime, and garlic powder, salt and pepper.  You just add to your own taste and if you like spice you can add some grilled jalapenos.
